The vegetable stir-fry embodies the Chinese wok principle of 'wok hei', high, fast heat that keeps vegetables bright, crunchy and full of flavour.

Main Spices & Their Role

Garlic

The aromatic backbone of the stir-fry.

Ginger

Adds warmth and cuts through the vegetables.

Ingredients

  • Mixed vegetables (pepper, carrot, broccoli)
  • 2 garlic cloves
  • 1 tsp ginger
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp oil
  • Salt

Method

  1. 01

    Chop all vegetables into even, bite-sized pieces.

    Heat oil in a wok until smoking.

  3. 03

    Add garlic and ginger, then the firmest vegetables first.

  4. 04

    Stir-fry on high heat for 3-4 minutes.

  5. 05

    Add soy sauce and sesame oil, toss and serve.
